Deb's Three Cheese Lasagna

Sauce: Brown in a large Dutch oven on medium heat:
1 lb. hamburg
1 minced clove garlic
1/4 cup chopped onion
1/4 cup chopped green pepper
½ cup sliced mushrooms
Drain off excess fat.

Add:
2 - 28 oz. crushed canned tomatoes (or comparable amount fresh tomatoes in season)
1 - 14 oz. can tomato sauce
2 tbsp. Italian seasoning
½ tsp. oregano
½ tsp. basil
½ tsp. sugar
Salt and pepper to taste.
Simmer 3/4 to 1 hour.

Grate:
Two 350 gram pkges. Black River mozzarella (or partly skim mozzarella).
½ cup Parmesan cheese
1 cup cottage cheese (optional)

Layer: In a large casserole dish (approx. 9 X 13)
Lasagna noodles (four per layer), sauce, BRC mozzarella, Parmesan and cottage cheese. Start with sauce and end with cheese on top. There should be three layers depending on depth of dish.

Bake: 1 hour covered then remove cover and bake another 1/4 hour or until cheese is melted and bubbly.

Note: This is enough sauce for two meals with the first night being a spaghetti dinner. I use the regular lasagna noodles (not the pre-cooked kind) but make the lasagna 12 hours ahead and refrigerate it. The noodles soak up the moisture from the sauce and don't need to be boiled in salt water first. It saves on energy costs!

Summer hours: Canada Day to Labour Day - Open Daily 9:00 am - 7:00 pm.
Sept - June - Open Daily from 9am to 5 pm.
Open 9-4 December 24th and December 31st
